Pink Lady in English




A typical Danish winter dish for when you need some extra strength to face the cold!

"Stegt flæsk med persillesovs"

Ingrediants
600 g. thickly sliced bacon with the fat (about 1-2cm thick)
2 tbsp. Plain flour
1 litre semi-skimmed milk
50g butter or margarine
Salt & pepper
1 bunch parsley
2kg potatoes

Preparation:
Heat the pan.
Add the bacon and brown for about ½ -1 min. on each side.
Reduce the heat and continue cooking until the bacon is nice and crisp.
Place the slices to one side on fat absorbent paper.
Sprinkle with salt.

Boil the peeled potatoes in a pan of salted water.

For the sauce:
Melt the butter in a saucepan.
Add the flour and mix until it forms a smooth paste
Whip in the milk.
Bring the sauce to the boil and simmer for about 5 minutes.
Add a little of the bacon fat, and season with salt and pepper.
Add the rinsed, chopped parsley.

Plate up the bacon and potatoes with the parsley poured over the potatoes.
TIP: This dish is delicious served with a side of puréed Pink Lady® apples!
